THE CHINOTTO DI SAVONA PRESIDIO SLOW FOOD
A PARTICULAR PLANT
Chinotto di Savona, cultivated for 2 generations from the Parodi Alessandro farm in the hinterland of Finale Ligure.
Its scientific name is Citrus Aurantium (L.),
amara variety (L.), sinesis sub-variety (according to Risso), also called Chinotto comune.
• It is among the rarest and most precious citrus fruits that exist in nature;
• It is an evergreen plant no higher than 3-4 meters, on which an incredible richness of white and fragrant cluster flowers develops;
• The plant generates compact fruits, spherical and flattened at the base, no larger than a mandarin orange and with a bright green color that turns orange over time;
• Its skin is very fragrant and rich in aromatic and digestive substances;
• The only region of Italy where this explicit and particular species of citrus fruit is grown productively is Liguria, in a narrow coastal area of the province of Savona, between the municipalities of Varazze and Pietra Ligure up to a maximum altitude of 300 meters above sea level. sea level;
• It is made into jams and used in ice cream, pastry, gastronomy and also to make infusions and liqueurs;
• In 2004 it became a “Slow Food Presidium” and in 2006 the trademark was registered.
