500 g whitebait
1 juicy lemon
Extra Virgin Olive Oil P.D.O. Riviera Ligure Riviera dei Fiori
Quickly wash the whitebait in a colander with slightly salted water, then pass them shortly on a clean cloth to dry.
Meanwhile, boil salted water in a saucepan, put the fish inside and drain them as soon as they change colour and the water boils again.
Place them on a platter and serve with filtered lemon juice, Extra Virgin Olive Oil P.D.O. Riviera Ligure Riviera dei Fiori, salt and pepper.
Decorate with a slice of lemon and a sprig of parsley.
